One thing about summer is those beautiful red strawberries, sweet and juicy. I saw some green ones, not ripe yet, and pickled them.
They turned out awesome. Instead of cucumber pickles with your burgers you should try these out.

2.5 lbs green strawberries, washed
800 grams white wine vinegar
800 grams water
500 grams sugar
30 grams sea salt
wash the strawberries. pat dry and put in a glass or stainless steel bowl.
make the brine. over medium heat add the water, vinegar, sugar and salt.
bring to a simmer.
pour brine over the strawberries. let sit overnight.enjoy.
